I saw this article and was completely intrigued. I had not heard of Sunbutter before, but basically it's just like peanut butter... but with sunflower seeds. Anyway, I decided to make these little sunbutter cups, but wanted some variety so I made some with coconut butter and almond butter! Coconut butter is the easiest thing in the entire world to make. Literally. You run some unsweetened shredded coconut in the food processor until it turns to butter. That's it! It took 15 to 20 minutes and I had to scrape down the sides a couple times, but it is delicious!

4 oz baking chocolate (I used 2oz unsweetened and 2oz semisweet - I like my chocolate REALLY dark, if you don't you'll want to go with a lighter mix... or just use chocolate chips).
Approximately 1/4 cup of coconut butter, sunbutter, almond butter (or any other "butter" you feel like using!)
Candy molds - I like these little silicone kind, they are so easy to use.
Chop the chocolate and then melt in a a double boiler.
One reason I LOVE these little silicone candy molds - you can pour a small amount of chocolate in the bottom and then squish in the sides to coat. So much easier than painting the entire mold.
Stick these in the freezer for about 10 minutes. Take out and fill with the filling of your choice.
Carefully cover with the remaining chocolate and pop back in the freezer for another 10 minutes.
Take them out of the molds and enjoy!
